Amaya Modern Mexican Launches at The Cosmopolitan of Las Vegas

Amaya Modern Mexican has launched at The Cosmopolitan of Las Vegas, bringing the tropical energy of Tulum and the flavors of coastal Mexico to the Las Vegas Strip. Created by Clique Hospitality for Gen3 Hospitality, the restaurant is led by Michelin-starred chef Jason McLeod.
The 7,180-square-foot restaurant, bar, and lounge was designed by Peter Bowden and PETERMAX Co. as an immersive escape from the surrounding casino floor. Rustic elegance, warm wood, layered lighting, lush planting, and richly textured materials create an atmosphere inspired by the tree-covered landscapes of Mexico’s Yucatán Peninsula.
The interior balances intimate dining alcoves with open social areas, allowing the restaurant to shift comfortably between relaxed dining and high-energy nightlife. Sculptural pendant lights, a dramatic bar, and organic ceiling details reinforce the sense of a refined beachside retreat.
Amaya’s menu focuses on modern coastal Mexican cuisine, with signature dishes including surf and turf, birria short rib, whole grilled fish, lobster enchiladas, ceviche, tiradito, and other shareable plates. The beverage program features aged tequilas, complex mezcals, and cocktails inspired by the history and flavors of Jalisco.
The launch event brought together guests, creators, and performers for an evening of dinner, drinks, live music, and fire performances. The adjacent Barbershop Cuts & Cocktails, a hidden lounge with a rock-and-roll atmosphere, offered an additional destination for guests following the opening celebration.
