Amaya Modern Mexican has opened at The Cosmopolitan of Las Vegas, bringing the spirit of Tulum and the flavors of coastal Mexico to the Las Vegas Strip. Led by Clique Hospitality and chef Jason McLeod, the restaurant focuses on shareable dishes, contemporary techniques, and ingredients rooted in Mexico’s culinary traditions.
Peter Bowden and PETERMAX Co. designed the interior as a refined escape from the energy of the Strip. Inspired by the rustic elegance and lush, tree-covered landscapes of the Yucatán Peninsula, the space combines intimate alcoves with open social areas to create a sophisticated yet inviting atmosphere.
The design uses warm, earthy materials, woven textures, curved forms, and layered lighting to evoke a relaxed beachside retreat. Lush planting and organic detailing reinforce the restaurant’s connection to Tulum while giving the space a distinctly polished setting within The Cosmopolitan.
Amaya’s menu includes coastal Mexican dishes such as citrusy ceviche, aguachile, fiery tiradito, duck confit tostadas, birria short rib, lobster enchiladas, and a two-pound whole lobster served with chili lobster cream sauce and Spanish rice. A signature fajita board provides a more theatrical presentation designed for sharing.
The beverage program highlights aged tequilas, complex mezcals, and cocktails such as the Mano a Mano, made with Flecha Azul, agave syrup, Seville orange bitters, and cocoa bitters. Together, the food, drinks, and interior create an immersive dining experience inspired by the history, landscape, and flavors of Mexico.
