Cleaverman and Filthy Martini Bar: Downtown Phoenix’s New Steak and Martini Destination

Cleaverman and Filthy Martini Bar are now open at Arizona Center in Downtown Phoenix, bringing together a classic steakhouse and an adjoining martini lounge under the Pretty Decent Concepts hospitality group.

Designed by Peter Bowden and PETERMAX Co., the two connected spaces use rich materials, warm lighting, sculptural details, and polished surfaces to create a cinematic atmosphere inspired by the glamour of the Great Gatsby era.

Cleaverman is organized around the character of its namesake—a master butcher presiding over an elite guild where craft, tradition, and confidence shape the experience. The more than 10,000-square-foot steakhouse includes a grand dining room, a statement bar, and private spaces for celebrations, business dinners, and intimate gatherings.

The interior is defined by dramatic fluted wood columns that expand into illuminated, fan-shaped ceiling forms. Dark leather banquettes, marble tables, patterned upholstery, arched openings, glowing table lamps, and mirrored surfaces give the dining room a sense of warmth and theatrical depth.

The steakhouse menu features dry-aged prime rib, a 32-ounce porterhouse, Australian and Japanese Wagyu, and dramatic lobster presentations including three-pound Thermidor and lobster Wellington. Starters and shareable dishes include baked potato rolls, beef tartare, oyster towers, shellfish gratins, and other playful interpretations of steakhouse classics.

Beyond the butcher shop, a discreet corridor leads to Filthy Martini Bar. The atmosphere shifts from Cleaverman’s substantial dining room to a lower-lit, gold-toned lounge with burlwood accents, low seating, live jazz or piano music, and a cocktail program centered on expressive martinis.

The two concepts are designed to work together while offering distinct experiences: Cleaverman for steakhouse dinners and celebrations, and Filthy Martini Bar for lingering cocktails, small bites, and late-night atmosphere.
