High-End Mexican Restaurant Sets Opening Date on the Strip

Amaya Modern Mexican brings a thoroughly Mexican dining experience to The Cosmopolitan of Las Vegas, pairing coastal Mexican cuisine with live DJs, performers, and an energetic atmosphere. The restaurant occupies approximately 7,200 square feet across a bar, lounge, and dining room in the second floor of the resort’s Boulevard Tower.

Designed by PETERMAX Co., the interior combines intimate and social spaces with a material palette inspired by the forest canopies and beach resorts of Mexico’s Yucatán Peninsula. Layered lighting, richly textured finishes, warm wood tones, and a dramatic bar create an immersive environment that balances luxury with a sense of discovery.

The culinary program features dishes including birria short rib, whole grilled fish, ceviche, tiradito, duck confit tostadas, lobster enchiladas, wagyu filet, dry-aged New York steak, and twin lobster tails. The beverage program highlights tequila and mezcal, with a catador overseeing a curated library of spirits and cocktails.
