Amaya Modern Mexican at The Cosmopolitan of Las Vegas, designed by Peter Bowden and the PETERMAX Co. team.

Amaya Modern Mexican has officially opened at The Cosmopolitan of Las Vegas, bringing coastal Mexican cuisine, innovative cocktails, and immersive entertainment to the Strip. Led by Michelin-starred Chef Jason McLeod, the restaurant presents a vibrant interpretation of Mexico’s culinary heritage.

Designed by Peter Bowden and the PETERMAX Co. team, Amaya’s interior reflects the lush, tropical elegance of the Yucatán Peninsula. Rustic elegance, tree-canopied spaces, warm wood tones, layered lighting, and intimate dining areas create an environment that is both refined and evocative across the 7,180-square-foot restaurant, bar, and lounge.

The menu features dishes including Amaya’s Surf & Turf, birria short rib, whole grilled fish, lobster enchiladas, and an extensive collection of aged tequilas and mezcals. DJs, live performers, and an energetic atmosphere encourage guests to immerse themselves in the restaurant’s sensory experience.
